The tasty, traditional kitchen is important for the Eco Park Hotel Azalea. With the move to more sustainability in all areas, a change in thinking also followed in the kitchen.

Less meat and more vegetarian and vegan dishes are mixed with the traditional kitchen. In addition, biological and regional products are used wherever possible.

Story and Philosophy

The Eco Park Hotel Azalea in Cavalese dates back to 1940, at that time managed by the grandparents of today’s owner Manuela. The great-aunts started the change and transformed the hotel in the pension Azalea.

Since his 14th birthday, Manuela’s father worked in the hotel and until 2012 he managed the hotel. He also initiated rebuilding measures, so that the Azalea has its today appearance since 2008.

Architecture

  • Parts of the today’s hotel are in family estate since the 18th century – in the beginning of the 40s it was redeveloped and altered in a pension, an annex was added in the 70s
  • The house was renovated without chemical adhesives and substances (CASACLIMA certification class B)
  • The used wood is not treated and free of solvent
  • The built-in windows are low energy windows
  • In the garden local plants are gown, pest control takes place without chemicals, use of copper instead

Water

  • The water consumption is controlled monthly, the water comes from the Acquedukt of Cavalese
  • Heat recovery and rainwater recovery system of the garden irrigation and the toilet flush
  • Towels and bed laundry are changed only after 3-4 days – or with special situations
  • The cleaning detergents are biodegradable, actual micro-organisms are also used

Energy

  • Power 100% from renewable energy
  • Own biomass heating
  • The energy consumption is measured regularly and saving targets are fixed and pursued
  • Application of power-saving and resource-saving technologies (e.g., LED lights, movement dispatch riders and time switch clocks)

Waste

  • Packaging material and disposable articles wherever possible and recyclable materials
  • In the bathrooms is a soap donator to fill-up
  • The employees are trained regularly in dealing with garbage separation and recycling
  • Besides, the correct garbage separation is controlled by the local disposal company Femme
  • Napkins and toilet paper are from recycled tetrapaks
  • Biodegradable straws with different decomposition duration are used

Food

  • Herbs, raspberries, red currants, and quinces are cultivated in the hotels own garden-are not enough however yet for the whole high season
  • The seasonal and regional kitchen is interpreted in a modern bio kitchen
  • Little meat, many vegetarian and vegan dishes. Up to now 90% of the kitchen is vegetarian, maximum twice a week local biology-cattle meat is served. The plan is to change to 100% vegetarian and to serve meat only on inquiry

Social Engagement

  • Long-term recruitment of local employees from the valley, as well as refugees
  • The hotel and the garden are completely barrier-free
  • Products are sourced from protected workshops and social cooperatives, cooperations with a local yoga center and the art museum
  • Support of social projects, e.g. by the purchase of felt products from local social associations

Mobility

  • The guest card allows free public local traffic and the use of ski-shuttle coaches
  • Own loading station for electric cars within the hotel area (“Destination Charging” partner of Evway)
